Virgin Mojito

I had mojitos for the first time when I visited my brother in law in Florida and we visited Miami a while back!
I don't drink alcohol much, but it was sweet and refreshing even with alcohol. It's traditionally made of rum, sugar cane juice, lime juice, soda water, and mint. I loved how they served it with actual sugar canes in Florida. Miami is such a great city for food and we ate way too much.
One of my favorite words I learned about mojitos was "muddle" and "muddler".  You use a muddler to crush the mint and lime to release the mint oils and lime juice. Here's some tips on proper muddling.
I wanted to make the non alcoholic version. I showed my recipe to my mom, who told me I was missing the most important part - the alcohol! I told her that's the the 'virgin' part of virgin mojito stood for.
We've had a crazy heat wave, so this has been perfect for the hot summer days. Enjoy!

Virgin Mojito 


Ingredients
1/2 cup mint leaves
1/4 cup lime juice
1/2 simple syrup
1 liter sparkling water
ice
lime slices and mint, for garnish

Directions
Tear up/crush mint leaves in lime juice. Add the simple syrup and sparkling water. Add more lime or simple syrup as needed to desired sourness/sweetnesss. Chill in the refrigerator. When ready to serve, add ice and garnish with lime slices and mint. Enjoy!
